Quinoa Fried Rice (Gluten Free, Organic, + Vegan!)

Ingredients
  • 1 cup TruRoots quinoa
  • 2 cups water or vegetable broth
  • 1 tbs coconut oil or vegetable oil
  • ½ tbs garlic
  • ½ tbs ginger
  • 1tbs chili paste
  • 2 cups of frozen veggies
  • optional: bbq pork or shrimp
  • optional: gluten free soy sauce
Instructions
  1. Boil Quinoa and water together
  2. Cover and cook on low for 15 minutes
  3. While that is cooking, heat oil, garlic, and ginger in a skillet or wok
  4. Add veggies, chili paste, and soy sauce and cook until veggies are soft
  5. Fold in cooked Quinoa
  6. Optional: Top with cooked BBQ Pork or Shrimp
