Chicken Bake With A Sun-Dried Tomato Cream Sauce

A sun-dried tomato cream sauce? Umm Yes!

Ever since I got pregnant with Little Ox #3 sun-dried tomatoes have been the ultimate craving! Luckily Costco has a huge jar for cheap and I can use it on anything I want!

I decided to make this deliciously easy sauce and it was the perfect pasta sauce that I hope I can make again and again! This meal was super easy!. And it worked out great for leftovers, too! I think it would be a great meal to bring over to a friend who just moved or just had a baby.

(p.s. remember to do that for others! Transitions are hard enough as it is, and it is nice not to have to worry about meals during that time)

Because my children are such picky eaters – it is very likely that we have pasta once of twice a week! It is one of the only meals they will eat and it makes it easy on us!

Chicken Pasta bake with sun-dried tomato cream sauce | This is a perfect meal to bring over to a new mom or to cook for your family any night of the week!

Sun Dried Tomato Chicken Bake
Prep time:  15 mins
Cook time:  20 mins
Total time:  35 mins
 
Ingredients
  • 4 chicken breasts cut into cubes or strips
  • 1 tsp minced garlic
  • 1 tsp basil
  • 1 tbs olive oil
  • 1 tsp paprika
  • 1 pint of heavy whipping cream
  • ½ cup of sun dried tomatoes
  • ¼ cup of fresh Parmesan Cheese
  • 1 box of spaghetti pasta, cooked
Instructions
  1. Cook chicken in a pan with olive oil.
  2. Add the basil, paprika and garlic to the pan and cook for about 15 minutes, stirring occasionally.
  3. Blend together heavy cream and sun-dried tomatoes
  4. Blend in cheese
  5. Once chicken is cooked, add sauce to the pan and cook for 2-3 minutes on medium.
  6. Set oven to broil
  7. Add pasta to a glass baking dish
  8. Add chicken with sauce to the top
  9. Top with more fresh parmesan cheese
  10. Broil in oven until cheese is melted and bubbly

Remember to be careful not to blend the sauce too much or you will end up with sun-dried tomato whipped cream! Next time I might add in a little spinach into the sauce too, to sneak in some veggies like I do every morning with their smoothies! 😉
