As I’m sure you know, coffee is LIFE when you’re a parent. I am only kind of joking, because being a mom of three boys is no easy task! During the summer I love having cold brew with a little coconut milk and vanilla syrup, but during the colder months -hot coffee is WHERE IT’S AT!

And with this coffee addiction lots of hot coffee – comes lots of creamer!

Simple Caramel Coffee Cake

I love finding ways to use it in more than just coffee! Plus, baking is a huge stress reliever! On days where a cup or two isn’t enough, I try to fake myself into thinking I have more caffeine. Sometimes tea does the trick. However, I thought it would be better to trick myself by having coffee CAKE instead of more coffee. I also thought it was clever to bake a COFFEE cake made with CREAMER! Get it?

I had the idea to make a coffee cake with my Caramel Simply Pure Creamer that I got at Walmart (in the dairy section!) because it had all the ingredients I needed for my coffee cake (plus caramel flavor -which made it even better)! Simply Pure has only 5 ingredients – 5 REAL ingredients. Since I needed cream, sugar, and milk for my coffee cake, why not use Simply Pure and make it SO much easier!

Simple Caramel Coffee Cake
Prep time:  5 mins
Cook time:  20 mins
Total time:  25 mins
 
Ingredients
  • 1 cup Simply Pure Creamer - Caramel
  • 1 egg
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 cup flour
  • ½ cup crushed pecans (or any nut/topping of your choice)
Instructions
  1. Preheat oven to 350°F
  2. Lightly grease glass or ceramic pie pan (or round cake pan)
  3. Mix Simply Pure Creamer and egg
  4. Mix dry ingredients
  5. Blend all and pour in pie pan
  6. Top with nuts
  7. Bake for 20 minutes or until done

This coffee cake was perfect and I could not believe how much easier it was with the Simply Pure creamer. Even better that it went PERFECTLY with my actual coffee+creamer!

To Top it Off

I thought it would be even tastier to use my Vanilla Simply Pure Creamer from Walmart to make a whipped cream! This was perfect because I used 1/2 cup of Vanilla Simply Pure, 1/2 cup of whipping cream, and 2 tbs of powdered coconut sugar and whipped up the easiest whipped cream ever.

I topped my coffee AND my coffee cake with this and it took it to the next level.

I feel like I need to have this Creamer Coffee Cake every time I have a cup of coffee. Secret time: I might have made a cup of coffee right now JUST so I could have some cake too.

This coffee cake does not disappoint and even if it did, the real ingredients from my Simply Pure creamer made my daily coffee more than just ordinary. It is the perfect everyday creamer because it IS so simple yet so flavorful!
