Holiday Sugar Cookies

Serves: about 50 small cookies
- 1 stick of Butter flavored shortening
- 1¼ cup of sugar
- ¼ cup of light corn syrup
- 1 tablespoon vanilla
- 2 eggs
- ¾ teaspoon of baking powder
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- 4 cups of flour (plus more if rolling)
- Mix together shortening and sugar in stand-mixer until well blended.
- Add in corn syrup, vanilla, and eggs and mix until light and fluffy.
- In a separate bowl, mix flour, baking powder and soda, and salt and add slowly to sugar mixture.
- Beat in until completely mixed and dough is formed.
- Cover and put in refrigerator (for 1 hr or overnight), if rolling and cutting.
- If you are not rolling it out, stuff in cookie press.
- After it has been refrigerated, roll out on flat surface with flour.
- Cut cookies or use cookie press and lay them out on ungreased baking sheet.
- Decorate cookies with sprinkles
- Place in oven at 375 degrees and cook for about 7-8 minutes.
- The thinner the cookies are, the less time they will take to cook
