Chocolate Chip (Fresh) Pumpkin Cookies

What makes it feel more like fall than making pumpkin (or pumpkin spiced) everything!? AND chocolate chip pumpkin!?

A few weeks ago, my husband and I were going over to a friends house for dinner and I asked her what kind of cookies I should bring. (If you haven’t noticed yet, cookies are my favorite thing to bake)

With it being officially fall, she chose Pumpkin Chocolate Chip Cookies! I was so happy that she chose that because I had been wanting to make something with pumpkin!

Earlier that week I had bought a couple sugar pumpkins to bake and puree for Little Ox #2, so it was perfect timing to make the perfect pumpkin cookies! And a classic Pumpkin Chocolate Chip was a great choice!

I tweaked my normal chocolate chip cookie recipe to make room for the fresh pumpkin puree and they turned out wonderful. Even my mom who dislikes pumpkin and any cookies with chocolate chips in them, thought they were great! Chocolate Chip Pumpkin Cookies are the best thing for any fall occasion! Or just because Chocolate Chip Pumpkin cookies are the best and you can eat them all day!

Chocolate Chip (Fresh) Pumpkin Cookies
Prep time:  45 mins
Cook time:  12 mins
Total time:  57 mins
Serves: 30
 
Ingredients
  • 2 sugar/pie pumpkins (for puree)
  • 1½ cups of flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 stick of butter, melted
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ⅓ cup pumpkin puree
  • 1 cup of chocolate chips
Instructions
  1. Line baking sheet with foil
  2. Oven at 350
  3. Cut of stems of pumpkins
  4. Cut pumpkins in half
  5. scoop out seeds
  6. Place Halved pumpkins skin side up on baking sheet
  7. Cook in oven for 35 minutes or until tender
  8. Cool pumpkins
  9. Scoop out pumpkin from skins and place in blender
  10. Blend pumpkin to puree
  11. -------------------------------------
  12. Pour all dry ingredients in bowl: flour, salt, baking soda, pumpkin pie spice
  13. Whisk together and set aside
  14. Combine melted butter, sugar, brown sugar, egg, and vanilla
  15. Fold in chocolate chips
  16. Cover and chill for at least 30 minutes
  17. Drop on to cookie sheet by the tablespoon
  18. Bake for 10-12 minutes
