Italian Meatball Soup

Before I get on with my Italian Meatball Soup recipe, I have to confess. I have been feeling a little cocky since my out-of-state friends have been complaining about HOT weather lately! Meanwhile, I am sipping my Pumpkin Spiced Lattes, watching the rain out my window with soup cooking in the kitchen. Sorry, not sorry. 😛

Soup is one of my FAVORITE things! I am ready to take on the cooler weather and bring out the crock pot!

Soup is easy and can also make for a simple clean up! What’s not to love about that?!

My beautiful farmer’s market finds inspired this meal, along with the WONDERFUL turkey meatballs from Trader Joe’s. Tomato soup is one of my favorites -and I could eat meatballs any time of day – so this recipe was a no brainer for me! Plus, I’m Italian, so I am not going to argue with anything that even resembles spaghetti.

A healthy, any-night-of-the-week, quick meal – Italian Meatball Soup!

Italian Meatball Soup
Prep time:  5 mins
Cook time:  35 mins
Total time:  40 mins
Serves: 5
 
Ingredients
  • 2 whole tomatoes, peeled and quartered
  • 2 cups chicken broth
  • 1 cup water
  • 1 bag of Trader Joe's Turkey Meatballs
  • 1 eggplant, peeled and diced
  • 1 cup of chopped rainbow chard (or other greens)
  • 8 oz of thin spaghetti noodles
  • 1 clove garlic
  • ½ white onion
Instructions
  1. Pour olive oil in a large pot on medium and add onion and garlic
  2. Add tomatoes and cook down for a few minutes
  3. Add chicken broth and water
  4. If you want it smooth, take an immersion blender to some of the tomatoes
  5. Cook for 15 minutes
  6. Add meatballs, eggplant, greens, and uncooked noodles
  7. Stir immediately to break apart the noodles
  8. Cook for 15-20 minutes, stirring occasionally
  9. Serve with fresh grated Parmesan and fresh basil

Don’t forget to season with salt and pepper during cooking and throw in crushed red pepper flakes if you like things spicy! 🙂
